  • 1 package (8 oz) phyllo dough
  • 2 cups fresh spinach (or 1 cup frozen)
  • 1 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 2 tbsp extra virgin olive oil, plus more for brushing
  • 1/4 cup toasted pine nuts
  • 2 large eggs
  • 1/4 cup sour cream

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add spinach and cook until wilted, about 3 minutes.
  3. In a bowl, combine sautéed spinach, feta cheese, toasted pine nuts, eggs, and sour cream; mix well.
  4. Layer phyllo dough sheets, brushing each layer with olive oil. Cut into squares and press into muffin tins.
  5. Fill each phyllo cup with the spinach mixture.
  6. Bake for 20-25 minutes or until golden brown and crispy.
