- 2 large eggs
- 1/4 cup sour cream
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add spinach and cook until wilted, about 3 minutes.
- In a bowl, combine sautéed spinach, feta cheese, toasted pine nuts, eggs, and sour cream; mix well.
- Layer phyllo dough sheets, brushing each layer with olive oil. Cut into squares and press into muffin tins.
- Fill each phyllo cup with the spinach mixture.
- Bake for 20-25 minutes or until golden brown and crispy.
