  • 1 cup diced bell peppers
  • 1 cup diced cucumbers
  • 1 cup halved cherry tomatoes

  • Juice of 1 lemon

Instructions

  1. Rinse quinoa under cold water until the water runs clear.
  2. In a saucepan, combine rinsed quinoa and water; bring to a boil. Lower heat to simmer and cook for about 15 minutes until fluffy.

  5. Once quinoa is cooked and cooled slightly, combine it with chopped vegetables in a large mixing bowl.
