  • 1 cup bell peppers, julienned
  • 1 cup cucumbers, julienned
  • 1 cup carrots, julienned
  • 1 ripe avocado, sliced
  • ¼ cup fresh mint leaves
  • ¼ cup fresh cilantro leaves
  • ½ cup natural peanut butter
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp lime juice (freshly squeezed)
  • Water (for softening rice paper)

Instructions

  1. Prepare all vegetables by washing them thoroughly and cutting them into thin strips.
  2. In a mixing bowl, combine peanut butter, soy sauce, lime juice, and a splash of water. Whisk until smooth.
  3. Soften each rice paper wrapper by dipping it into warm water for about 10–15 seconds. Lay it flat on a clean surface.
  4. Place a handful of the prepared veggies and some herbs in the center of the wrapper.
  5. Fold the sides over the filling and gently roll from the bottom to secure the contents inside. Repeat until all ingredients are used.
  6. Serve chilled with extra peanut sauce for dipping.
