  • 2 celery stalks, diced

  • 8 cups low-sodium chicken broth
  • 2 cups egg noodles
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Chop vegetables: Dice carrots, celery, onion, and garlic.
  2. Sauté aromatics: In a large pot over medium heat, add olive oil. Sauté onions and garlic until golden brown (3-4 minutes).
  3. Add chicken and veggies: Stir in chicken breasts along with carrots and celery; cook for 5 minutes until slightly softened.
  4. Pour in broth: Add chicken broth, thyme, and bay leaves; bring to a boil then reduce heat to simmer for 25-30 minutes until chicken is cooked.
  5. Shred the chicken: Remove chicken from pot, shred it using two forks, and return to the pot.
  6. Cook noodles: Stir in egg noodles and cook according to package instructions (7-10 minutes). Season with salt and pepper before serving.
