  • 3 boneless, skinless chicken breasts (about 1.5 lbs), diced
  • 1 cup orzo pasta
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 4 cups chicken broth
  • 8 oz cream cheese
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion and minced garlic until soft (about 3 minutes).
  2. Add diced chicken to the pot and cook until golden brown.
  3. Stir in diced carrots, frozen peas, and uncooked orzo; sauté for another 2–3 minutes.
  4. Gradually pour in chicken broth; bring to a boil and simmer for about 5 minutes.
  5. Mix in cream cheese until melted and smooth.
  6. Season with thyme, parsley, salt, and pepper to taste.
