Ingredients
Scale
- 1 cup orzo pasta
- 3–4 boneless skinless chicken breasts (about 1 lb)
- 1 cup diced fresh carrots
- 1 cup frozen peas
- 1 cup diced celery
- 4 cups low-sodium chicken broth
- 4 oz cream cheese (softened)
- 1 tsp dried thyme
- 1 tsp garlic powder
- 2 tbsp butter or olive oil
- Salt and pepper, to taste
Instructions
- Prepare your ingredients by chopping vegetables into bite-sized pieces.
- In a large pot over medium heat, melt butter. Add diced chicken seasoned with salt and pepper; cook for about 6-8 minutes until golden brown. Remove from pot.
- In the same pot, add carrots, celery, and peas. Sauté for about 5 minutes until slightly softened.
- Pour in the chicken broth, scraping any browned bits from the bottom of the pot. Gradually add cream cheese while stirring until melted and smooth.
- Stir in uncooked orzo and bring to a gentle simmer. Cover and cook for about 10-12 minutes until orzo is tender but not mushy.
- Add thyme, garlic powder, and any remaining butter. Adjust seasoning as needed before serving.
