  • 34 boneless skinless chicken breasts (about 1 lb)
  • 1 cup diced fresh carrots
  • 1 cup frozen peas
  • 1 cup diced celery
  • 4 cups low-sodium chicken broth
  • 4 oz cream cheese (softened)
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 2 tbsp butter or olive oil
  • Salt and pepper, to taste

Instructions

  1. Prepare your ingredients by chopping vegetables into bite-sized pieces.
  2. In a large pot over medium heat, melt butter. Add diced chicken seasoned with salt and pepper; cook for about 6-8 minutes until golden brown. Remove from pot.
  3. In the same pot, add carrots, celery, and peas. Sauté for about 5 minutes until slightly softened.
  4. Pour in the chicken broth, scraping any browned bits from the bottom of the pot. Gradually add cream cheese while stirring until melted and smooth.
  5. Stir in uncooked orzo and bring to a gentle simmer. Cover and cook for about 10-12 minutes until orzo is tender but not mushy.
  6. Add thyme, garlic powder, and any remaining butter. Adjust seasoning as needed before serving.
