  • 2 medium sweet potatoes (about 500g), diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup quinoa, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • Juice of 1 lime

Instructions

  1. Sauté chopped onions and minced garlic in a skillet over medium heat until translucent.
  2. In your crock pot, combine sautéed onions and garlic with sweet potatoes, black beans, quinoa, diced tomatoes, vegetable broth, chili powder, cumin, and lime juice. Stir well.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until sweet potatoes are tender.
  4. Taste and adjust seasoning if needed before serving.
