- 2 medium sweet potatoes (about 500g), diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup quinoa, rinsed
- 1 can (14.5 oz) diced tomatoes
- 4 cups low-sodium vegetable broth
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tsp chili powder
- 1 tsp cumin
- Juice of 1 lime
Instructions
- Sauté chopped onions and minced garlic in a skillet over medium heat until translucent.
- In your crock pot, combine sautéed onions and garlic with sweet potatoes, black beans, quinoa, diced tomatoes, vegetable broth, chili powder, cumin, and lime juice. Stir well.
