Ingredients

  • 2 cups canned chickpeas, rinsed and drained
  • 4 cups low-sodium vegetable broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 2 cups fresh spinach or kale
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 can (14.5 oz) diced tomatoes in juice

Instructions

  1. In the crockpot, sauté onion and garlic in olive oil until fragrant.
  2. Add diced carrots and celery; stir well to soften slightly.
  3. Mix in rinsed chickpeas and canned tomatoes with their juices.
  4. Pour in vegetable broth and sprinkle with cumin and paprika; stir to combine.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. About 30 minutes before serving, stir in spinach or kale until wilted.
