  • 34 boneless skinless chicken breasts (about 1 pound)
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme (or 1 tbsp fresh thyme)
  • 8 oz egg noodles
  • 1/4 cup fresh parsley, chopped (for garnish)
  • 1/4 cup fresh dill, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from chicken breasts and season generously with salt and pepper.
  2. Heat olive oil in a large pot over medium heat. Sear the chicken until golden brown on both sides (about 5 minutes). Remove and set aside.
  3. In the same pot, sauté onions, carrots, and celery until softened (around 5 minutes).
  4. Add minced garlic and thyme; cook until fragrant (about 30 seconds).
  5. Pour in the chicken broth and return the chicken to the pot. Bring to a gentle simmer for about 20-25 minutes.
  6. Remove the chicken again; add egg noodles to the broth and cook according to package instructions (usually around 6-8 minutes).
  7. Shred the chicken into bite-sized pieces once cool enough to handle and return it to the pot along with parsley and dill just before serving.
