  • 1 cup breadcrumbs (plain or Italian-style)
  • ¼ cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • 28 oz canned whole peeled tomatoes
  • 4 cups chicken broth
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese for serving

Instructions

  1. Prep your ingredients: Chop vegetables and gather all ingredients.
  2. Mix meatball ingredients: In a large bowl, combine ground beef, breadcrumbs, parsley, garlic, salt, and pepper. Mix until well combined.
  3. Shape meatballs: Roll the mixture into small balls (about 1 inch in diameter) and set aside.
  4. Sauté vegetables: In a large pot over medium heat, add olive oil and sauté diced carrots and celery until softened (about 5 minutes).
  5. Add tomatoes & broth: Pour in canned tomatoes (crushing them as you go) along with chicken broth; bring to a gentle boil.
