- 1 lb lean ground beef
- 1/2 cup plain breadcrumbs
- 1 large egg
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp fresh dill, chopped
- 4 cups low-sodium chicken broth
- 1/2 cup heavy cream
- 1 cup carrots, diced
- 1 cup celery, diced
- Salt and pepper to taste
- 1/2 cup pearl barley (optional)
Instructions
- In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic, dill, salt, and pepper. Form mixture into small meatballs (about 1 inch).
- Heat oil in a skillet over medium heat and brown meatballs on all sides (about 5 minutes). Set aside.
- In the same skillet, sauté carrots and celery until softened (3-4 minutes).
- Pour in chicken broth while scraping up any browned bits from the pan for added flavor. Stir in heavy cream.
- Return meatballs to the pot along with optional pearl barley. Simmer for about 20 minutes until cooked through.
- Adjust seasoning if needed and serve with fresh dill garnish.
