Description

Swedish Meatball Soup is the ultimate comfort food, perfect for chilly evenings. With tender meatballs simmered in a creamy broth infused with aromatic herbs and spices, each spoonful wraps you in warmth.


Ingredients

  • 1 lb lean ground beef
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp fresh dill, chopped
  • 4 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • Salt and pepper to taste
  • 1/2 cup pearl barley (optional)

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic, dill, salt, and pepper. Form mixture into small meatballs (about 1 inch).
  2. Heat oil in a skillet over medium heat and brown meatballs on all sides (about 5 minutes). Set aside.
  3. In the same skillet, sauté carrots and celery until softened (3-4 minutes).
  4. Pour in chicken broth while scraping up any browned bits from the pan for added flavor. Stir in heavy cream.
  5. Return meatballs to the pot along with optional pearl barley. Simmer for about 20 minutes until cooked through.
  6. Adjust seasoning if needed and serve with fresh dill garnish.
