  • 34 boneless skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 medium onion, finely chopped
  • 10 corn tortillas
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup shredded cheddar or Monterey Jack cheese
  • Cooking spray (for baking)
  • Sour cream or guacamole (for serving)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, add a splash of oil and sauté the chopped onion until translucent. Add minced garlic and sauté for another minute.
  3. Stir in cumin and chili powder; let bloom for 30 seconds. Add cooked chicken and shred it with two forks until well combined.
