- 3–4 boneless skinless chicken breasts (about 1 lb)
- 2 cloves fresh garlic, minced
- 1 medium onion, finely chopped
- 10 corn tortillas
- 1 tsp cumin
- 1 tsp chili powder
- 1 cup shredded cheddar or Monterey Jack cheese
- Cooking spray (for baking)
- Sour cream or guacamole (for serving)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet over medium heat, add a splash of oil and sauté the chopped onion until translucent. Add minced garlic and sauté for another minute.
- Stir in cumin and chili powder; let bloom for 30 seconds. Add cooked chicken and shred it with two forks until well combined.
