  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups fresh raspberries
  • 1 cup white chocolate chips
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs (room temperature)

Instructions

  1. Preheat your oven to 325°F (160°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, combine graham cracker crumbs and melted butter until crumbly. Press into the bottom of the prepared pan.
  3. Melt white chocolate chips and let cool slightly.
  4. In another bowl, beat softened cream cheese and sugar until fluffy. Mix in eggs one at a time, then add vanilla and melted white chocolate.
  5. Gently fold in raspberries without breaking them.
  6. Pour the mixture over the crust and bake for 30-35 minutes until set but slightly jiggly in the center.
  7. Cool completely before slicing into squares.
