  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup corn (fresh or frozen)
  • 2 tbsp chili powder
  • 1 cup sharp cheddar cheese, shredded
  • 1 box Jiffy Corn Muffin Mix
  • 1/3 cup whole milk

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef for 5-7 minutes.
  3. Stir in beans and tomatoes; simmer for 5 minutes.
  4. Add corn and chili powder; cook for another 3 minutes.
  5. In a bowl, mix Jiffy Corn Muffin Mix with milk until just combined.
  6. Pour chili mixture into a greased baking dish; spread cornbread batter on top.
  7. Bake for 30-35 minutes until golden brown and bubbly.
