Description

Chinese Chicken Pasta Salad is a vibrant and flavorful dish that combines tender chicken, crunchy vegetables, and al dente rotini pasta, all harmoniously tossed in a tangy dressing.   • 1 lb boneless chicken thighs
  • 8 oz rotini pasta
  • 1 cup red bell pepper, chopped
  • 1 cup yellow bell pepper, chopped
  • 1 cup cucumber, thinly sliced
  • 4 green onions, sliced
  • 2 tsp sesame oil
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp honey or maple syrup
  • ¼ cup fresh cilantro (optional)

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente, drain and rinse under cold water.
  2. Season the chicken thighs with salt and pepper. Heat oil in a skillet over medium heat and cook the chicken for 6-7 minutes on each side until golden brown and cooked through. Slice into strips.
  3. In a large bowl, combine the chopped bell peppers, cucumber, and green onions.
  4. In a separate bowl, whisk together sesame oil, soy sauce, rice vinegar, and honey/maple syrup.
  5. Add cooled pasta and sliced chicken to the vegetable mixture. Pour dressing over the top and toss gently to combine.
  6. If using cilantro, sprinkle on top before serving. Enjoy chilled or at room temperature.
