- 1 lb boneless chicken thighs
- 8 oz rotini pasta
- 1 cup red bell pepper, chopped
- 1 cup yellow bell pepper, chopped
- 1 cup cucumber, thinly sliced
- 4 green onions, sliced
- 2 tsp sesame oil
- 3 tbsp low-sodium soy sauce
- 2 tbsp rice vinegar
- 2 tbsp honey or maple syrup
- ¼ cup fresh cilantro (optional)
Instructions
- Cook the rotini pasta in salted boiling water until al dente, drain and rinse under cold water.
- Season the chicken thighs with salt and pepper. Heat oil in a skillet over medium heat and cook the chicken for 6-7 minutes on each side until golden brown and cooked through. Slice into strips.
- In a large bowl, combine the chopped bell peppers, cucumber, and green onions.
- In a separate bowl, whisk together sesame oil, soy sauce, rice vinegar, and honey/maple syrup.
- Add cooled pasta and sliced chicken to the vegetable mixture. Pour dressing over the top and toss gently to combine.
- If using cilantro, sprinkle on top before serving. Enjoy chilled or at room temperature.
