  • 1 lb lean ground beef
  • 3 cups penne or rotini pasta
  • 1 packet (1 oz) ranch dressing mix
  • 1 cup shredded sharp cheddar cheese
  • 8 oz cream cheese, cubed
  • 2 cups low-sodium beef broth
  • ¼ cup chopped green onions
  • ¼ cup grated Parmesan cheese

Instructions

  1. Spray your slow cooker with nonstick spray for easy cleanup.
  2. In a skillet over medium heat, brown the ground beef until fully cooked; drain excess fat.
  3. Add the cooked beef to the slow cooker along with pasta, ranch dressing mix, cream cheese, beef broth, and half of the cheddar cheese; stir until well combined.
  4. Cover and cook on low for 4 hours or high for 2 hours until hot and bubbly.
  5. About 10 minutes before serving, stir in the remaining cheddar cheese until melted. Top with green onions and Parmesan before serving.
