Ingredients

  • 1 lb ground beef or turkey
  • 8 oz short pasta (penne or rotini)
  • 2 tbsp taco seasoning
  • 1 (14.5 oz) can diced tomatoes with green chilies
  • 1 (15 oz) can black beans, drained and rinsed
  • 8 oz cream cheese
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 2 green onions, chopped
  • Fresh cilantro for garnish

Instructions

  1. Brown the ground meat in a skillet over medium heat for 5-7 minutes; drain excess fat.
  2. Stir in taco seasoning until well combined; simmer for an additional minute.
  3. Transfer the seasoned meat to a crockpot along with cooked pasta, diced tomatoes, black beans, and cream cheese. Stir until combined.
  4. Set the crockpot on low and cook for 3-4 hours.
  5. About 15 minutes before serving, sprinkle shredded cheese on top and cover until melted.
