  • 4 boneless, skinless chicken breasts (about 500g)
  • 1 red bell pepper (diced)
  • 1 yellow bell pepper (diced)
  • 1 medium onion (sliced)
  • 1 zucchini (diced)
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Juice of 1 lemon
  • Salt & pepper to taste

Instructions

  1. Prepare the vegetables by washing and chopping them into bite-sized pieces.
  2. In a bowl, combine olive oil, cumin, paprika, salt, pepper, and lemon juice. Add chicken breasts and coat evenly; let marinate for at least 30 minutes.
  3. Heat a skillet over medium heat. Add olive oil and sauté onion and garlic until golden brown (about 2 minutes).
  4. Add the bell peppers and zucchini to the skillet; cook until tender (approximately 5 minutes).
  5. Push the veggies to one side of the skillet and add marinated chicken. Cook until golden brown on both sides (about 6-7 minutes per side).
  6. Gently combine everything in the skillet for an additional minute before serving hot.
