- 4 boneless, skinless chicken breasts (about 500g)
- 1 red bell pepper (diced)
- 1 yellow bell pepper (diced)
- 1 medium onion (sliced)
- 1 zucchini (diced)
- 3 cloves garlic (minced)
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- Juice of 1 lemon
- Salt & pepper to taste
Instructions
- Prepare the vegetables by washing and chopping them into bite-sized pieces.
- In a bowl, combine olive oil, cumin, paprika, salt, pepper, and lemon juice. Add chicken breasts and coat evenly; let marinate for at least 30 minutes.
- Heat a skillet over medium heat. Add olive oil and sauté onion and garlic until golden brown (about 2 minutes).
- Add the bell peppers and zucchini to the skillet; cook until tender (approximately 5 minutes).
- Push the veggies to one side of the skillet and add marinated chicken. Cook until golden brown on both sides (about 6-7 minutes per side).
- Gently combine everything in the skillet for an additional minute before serving hot.
