- 4 cups fresh romaine lettuce, chopped
- 1 cup cherry tomatoes, halved

- ½ cup sour cream or Greek yogurt
- 2 tbsp taco seasoning
- 2 tbsp olive oil
- ½ cup salsa (mild, medium, or hot)
- 1 avocado, sliced
- 1 can (15 oz) black beans, rinsed (optional)
Instructions
- In a skillet over medium heat, add olive oil and ground beef. Cook until browned and no longer pink, about 5-7 minutes.
- Sprinkle taco seasoning over the cooked beef. Add a splash of water (about ¼ cup) and stir well. Allow simmering for 3-4 minutes until thickened slightly.
