  • 1 whole turkey (1214 lbs)
  • 2 cups fresh cranberries
  • 1 cup low-sodium chicken broth
  • 1 cup yellow cornmeal
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 cup unsalted butter (divided)
  • ½ cup sugar
  • ½ cup toasted pecans (optional)

Instructions

  1. Preheat oven to 325°F (160°C). Rinse turkey under cold water and pat dry.
  2. Rub softened butter over turkey skin; season with salt, pepper, and herbs.
  3. In a saucepan, combine cranberries, sugar, and water; cook until berries pop.
  4. Mix cornmeal, flour, baking powder, sugar, milk, eggs, and melted butter in a bowl; bake until golden brown.
  5. Sauté onion and celery in butter; mix with crumbled cornbread and chicken broth to make stuffing.
  6. Roast turkey breast-side up for about 13 minutes per pound; baste occasionally.
