- 4 medium sweet potatoes (about 2 lbs)
- 1 cup fresh cranberries
- 2 medium tart apples (like Granny Smith), diced
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 4 tbsp unsalted butter
Instructions
- Preheat oven to 400°F (200°C).
- Wash and pierce sweet potatoes several times with a fork. Bake directly on the oven rack for 45-50 minutes until tender.
- While baking, chop cranberries and apples; mix with brown sugar and cinnamon in a bowl.
- Once sweet potatoes are cool, slice in half lengthwise and scoop out the flesh into a bowl. Mix flesh with butter and half of the cranberry-apple mixture.
- Stuff potato halves with the filling, topping with remaining cranberry-apple mixture. Return to oven at 375°F (190°C) for 15-20 minutes until warm and slightly caramelized.
