  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh broccoli florets
  • 1 cup uncooked long-grain rice
  • 2 cups shredded sharp cheddar cheese
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 tsp paprika (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, soak the uncooked rice in water according to package instructions.
  2. Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
  3. In the same bowl with the rice, add broccoli florets and cream of mushroom soup. Mix until well combined.
  4. Fold in half of the cheddar cheese and the soaked rice mixture.
  5. Transfer to a greased casserole dish and top with remaining cheese and paprika.
  6. Bake uncovered for 30-35 minutes until bubbly and golden brown.
  7. Let it rest for 10 minutes before serving.
