  • 8 oz fusilli pasta
  • 6 strips thick-cut bacon
  • 1 cup cherry tomatoes, halved
  • 2 cups romaine lettuce, chopped
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente, then drain and rinse under cold water.
  2. In a skillet over medium heat, cook bacon until crispy (about 6-8 minutes). Drain on paper towels.
  3. In a bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, salt, and pepper until smooth.
  4. In a large bowl, combine cooked pasta, romaine lettuce, cherry tomatoes, red onion, and crumbled bacon. Pour the dressing over and mix well.
