  • 1 medium head of cauliflower
  • 2 tbsp extra virgin olive oil
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 whole wheat pita breads
  • 1 cup diced cucumbers
  • 1 cup diced tomatoes
  • ½ cup diced red onions
  • ½ cup hummus
  • Juice of 1 lemon
  • Fresh parsley or cilantro for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut cauliflower into small florets and toss with olive oil, cumin, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  3. Spread the cauliflower on a baking sheet and roast for 25–30 minutes until golden brown and crispy.
  4. While the cauliflower roasts, slice cucumbers, tomatoes, and red onions for toppings.
  5. Lightly toast pita bread in a pan or oven until warm.
  6. Assemble bowls by layering pita bread with roasted cauliflower, fresh veggies, hummus, a drizzle of lemon juice, and garnish with parsley or cilantro.
