  • 8 oz cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup bell peppers (finely chopped, mixed colors)
  • 1/2 cup green onions (finely chopped)
  • 1/2 cup jalapeños (seeded and chopped) – Optional
  • 1 tsp garlic powder – Optional

Instructions

  1. Gather your tools: cutting board, knife, mixing bowl, spatula, and baking sheet lined with parchment paper.
  2. Finely chop the bell peppers and green onions.
  3. In a mixing bowl, blend softened cream cheese until smooth; then add shredded cheeses, bell peppers, green onions, garlic powder, and jalapeños (if using).
  4. Spread an even layer of the filling on each tortilla, leaving about half an inch from the edges.
  5. Roll each tortilla tightly like a burrito and slice them into bite-sized pieces.
  6. Place the pieces seam-side down on the prepared baking sheet.
