  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes in juice
  • 4 cups low-sodium vegetable broth
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent (about 5 minutes). Stir in minced garlic and cook until fragrant.
  2. Add rinsed lentils and diced tomatoes to the pot; stir for two minutes.
  3. Pour in vegetable broth and add cumin, thyme, bay leaf, salt, and pepper. Bring to a gentle boil.
  4. Reduce heat to low and cover the pot; simmer for 30-40 minutes until lentils are tender.
  5. Adjust seasoning if needed and remove the bay leaf before serving.
