- 1.5 lbs beef chuck roast (cut into 1-inch pieces)
- 2 cups carrots (sliced)
- 2 cups potatoes (cubed)
- 1.5 cups green beans (trimmed and halved)
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 14 oz diced tomatoes (canned, undrained)
- 4 cups low-sodium beef broth
- 2 tsp fresh thyme (or 1 tsp dried thyme)
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Prepare your ingredients by chopping vegetables into bite-sized pieces.
- In a large pot, heat a splash of oil over medium-high heat. Sear the beef on all sides for about 5 minutes until browned.
- Remove the beef and add onions and garlic to the pot; sauté until translucent, about 3-4 minutes.
- Return the beef to the pot along with carrots, potatoes, green beans, diced tomatoes, beef broth, thyme, bay leaves, salt, and pepper. Stir well.
- Bring to a boil then reduce heat to low. Cover and simmer for 1.5 – 2 hours until the beef is tender.
- Adjust seasoning before serving hot.
