  • 1.5 lbs beef chuck roast (cut into 1-inch pieces)
  • 2 cups carrots (sliced)
  • 2 cups potatoes (cubed)
  • 1.5 cups green beans (trimmed and halved)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 14 oz diced tomatoes (canned, undrained)
  • 4 cups low-sodium beef broth
  • 2 tsp fresh thyme (or 1 tsp dried thyme)
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping vegetables into bite-sized pieces.
  2. In a large pot, heat a splash of oil over medium-high heat. Sear the beef on all sides for about 5 minutes until browned.
  3. Remove the beef and add onions and garlic to the pot; sauté until translucent, about 3-4 minutes.
  4. Return the beef to the pot along with carrots, potatoes, green beans, diced tomatoes, beef broth, thyme, bay leaves, salt, and pepper. Stir well.
  5. Bring to a boil then reduce heat to low. Cover and simmer for 1.5 – 2 hours until the beef is tender.
  6. Adjust seasoning before serving hot.
