- 3–4 boneless, skinless chicken breasts
- 8 oz fusilli pasta
- 2 cups fresh spinach
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 8 oz cream cheese, softened
- ½ cup grated Parmesan cheese
- 2 tsp Italian seasoning
- 2 tbsp extra-virgin olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then cook until golden brown and cooked through (about 6-7 minutes per side). Remove and keep warm.
- In another pot, boil salted water and cook fusilli pasta according to package instructions (8-10 minutes). Drain and set aside.
- In the same skillet used for the chicken, add minced garlic and halved cherry tomatoes. Sauté until fragrant (1-2 minutes).
- Lower the heat and add softened cream cheese and Italian seasoning to the skillet. Stir until creamy; adjust consistency with reserved pasta water if needed.
- Add cooked pasta and fresh spinach to the skillet, tossing everything until well combined and spinach wilts slightly.
- Serve hot, garnished with grated Parmesan cheese.
