  • 8 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • ½ cup unsalted butter, melted and at room temperature
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened cocoa powder
  • 1 cup heavy cream
  • 2 tbsp red food coloring (gel preferred)
  • 1 tsp baking powder
  • ½ tsp baking soda

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line with parchment paper.
  2. In a large bowl, combine the red velvet cake mix, eggs, melted butter, buttermilk, cocoa powder, vanilla extract, and food coloring. Mix until smooth.
  3. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick comes out clean. Allow cooling completely.
  4. While the cakes cool, beat together the cream cheese and softened butter until fluffy. Gradually add powdered sugar and vanilla extract.
  5. Assemble by placing one cake layer on a serving platter and spreading frosting on top before adding the second layer. Frost the entire cake generously.
