  • 1 lb beef chuck roast, cubed
  • 2 medium carrots, diced
  • 2 medium Yukon Gold potatoes, chopped
  • 1 medium yellow onion, diced
  • 1 cup frozen peas
  • 2 cups low-sodium beef broth
  • 1 sheet puff pastry (thawed)
  • 2 tbsp flour
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 tsp fresh rosemary (or 1 tsp dried)
  • Salt and pepper to taste
  • 3 tbsp unsalted butter

Instructions

  1. In a large pot, melt butter over medium heat. Add cubed beef and season with salt and pepper; brown on all sides. Remove from pot.
  2. In the same pot, sauté onions, carrots, and potatoes until onions are translucent (about 5 minutes).
  3. Sprinkle flour over vegetables; stir for about 2 minutes until golden. Gradually add beef broth while stirring to prevent lumps.
  4. Return beef to pot along with frozen peas and herbs; simmer for 10-15 minutes until thickened.
  5. Preheat oven to 400°F. Pour filling into an oven-safe dish; cover with puff pastry, sealing edges and cutting slits for steam.
  6. Bake for 25-30 minutes until the crust is golden brown.
