  • 1 cup dry red wine

  • 4 cups low-sodium beef broth
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Season short ribs with salt and pepper; sear until browned on all sides (3-4 minutes per side). Remove and set aside.
  2. In the same pot, sauté onions and garlic until translucent (about 5 minutes).
  3. Add carrots; stir for a minute before pouring in red wine. Scrape up any browned bits from the pot.
  4. Return short ribs to the pot; add beef broth and herbs. Bring to a simmer, cover, and braise on low heat for 2-3 hours until tender.
  5. Strain the cooking liquid to create a sauce; serve over creamy mashed potatoes or polenta.
