  • 1 large onion, thinly sliced
  • 2 carrots, chopped
  • 2 celery stalks, diced
  • 4 garlic cloves, smashed
  • 1 cup red wine
  • 2 cups low-sodium beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Heat olive oil in a large Dutch oven over medium-high heat. Season short ribs with salt and pepper; sear on all sides until browned (about 3-4 minutes per side). Remove and set aside.
  3. In the same pot, add onions, carrots, celery, and garlic; sauté until softened (about 5 minutes).
  4. Deglaze with red wine, scraping up brown bits; simmer until reduced by half (5-7 minutes).
  5. Return short ribs to the pot along with beef broth, thyme, and bay leaves. Bring to a gentle boil then reduce heat to low; cover and braise in the oven for about 2.5 to 3 hours until fork-tender.
