  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves garlic, minced
  • 1 cup diced bell peppers (mix of red and green)
  • 1 medium onion, chopped
  • 2 tablespoons Cajun seasoning
  • 6 cups low-sodium chicken broth
  • 14 oz canned diced tomatoes (with juice)
  • 1/2 cup heavy cream (optional)

Instructions

  1. Prepare your ingredients by chopping the vegetables and mincing the garlic.
  2. In a large pot over medium heat, add a splash of oil and sauté the onions until translucent (3-4 minutes).
  3. Add chicken breasts, bell peppers, and garlic; stir for an additional 2-3 minutes.
  4. Pour in chicken broth and diced tomatoes, then stir in Cajun seasoning. Bring to a boil, reduce heat, and simmer for 20-25 minutes.
  5. Remove chicken breasts, shred them with forks, and return to the pot. If using cream, add it now and simmer for another 5 minutes.
