  • 1 lb boneless, skinless chicken breasts (about 34 breasts)
  • 1 cup raw unsalted cashews
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 tbsp fresh ginger, minced
  • 4 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp cornstarch
  • 2 tbsp honey or sugar
  • 1 tsp sesame oil

Instructions

  1. Prep the chicken by cutting it into bite-sized pieces. Dice the bell peppers and mince the garlic and ginger.
  2. Marinate the chicken with soy sauce, cornstarch, and sesame oil for at least 15 minutes.
  3. In a large skillet over medium heat, sauté garlic and ginger until fragrant (about 1 minute).
  4. Add marinated chicken to the skillet; cook until golden brown and cooked through (5-7 minutes).
  5. Stir in bell peppers and cashews; sauté for another 3-4 minutes until veggies are tender.
  6. Add honey (or sugar) and additional soy sauce if desired; let bubble for about 2 minutes until coated.
