  • 4 fluffy waffles (store-bought or homemade)
  • 4 large eggs
  • 1 cup whole milk (or almond/oat milk)
  • 1/2 cup maple syrup (for drizzling)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt, pepper, garlic powder, and paprika. Sauté in a skillet over medium heat until golden brown and fully cooked (about 6-7 minutes per side). Allow cooling before shredding.
  3. Toast waffles until slightly crispy; cut into quarters for layering.
  4. In a bowl, whisk together eggs and milk until well combined.
  5. Layer half of the waffle pieces in the baking dish, followed by shredded chicken and half of the egg mixture. Repeat layers with remaining ingredients.
  6. Bake uncovered for 25-30 minutes or until set and golden on top. Let cool slightly before drizzling with maple syrup.
