Ingredients

  • 3 boneless, skinless chicken breasts (about 1 lb / 450g)
  • 2 ripe avocados
  • 2 cups fresh spinach leaves
  • 1 medium firm tomato
  • 4 large whole wheat tortillas
  • 1/2 cup plain Greek yogurt
  • Salt and pepper to taste

Instructions

  1. Preheat grill or skillet over medium heat.
  2. Season chicken breasts with salt and pepper; cook for 6-7 minutes on each side until golden brown and internal temperature reaches 165°F (75°C).
  3. While chicken cooks, chop tomatoes and slice avocados.
  4. In a small bowl, mix Greek yogurt with a pinch of salt and pepper.

  6. Fold in sides of each tortilla and roll tightly from the bottom up.
