This quick-to-make recipe brings a delightful burst of flavors to your dinner table, making it perfect for weeknight meals or special gatherings.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1 lb), diced
  • 3 cloves fresh garlic, minced
  • 2 cups mixed vegetables (bell peppers, carrots, snap peas)
  • 8 oz chow mein noodles
  • ¼ cup low-sodium soy sauce
  • 2 tbsp sesame oil
  • 4 green onions, sliced thinly
  • 1 inch fresh ginger, grated

Instructions

  1. Prep the ingredients by dicing the chicken and slicing the vegetables thinly.
  2. Heat a large skillet or wok over medium-high heat and add oil. Cook the chicken until golden brown and cooked through (5-7 minutes).
  3. Stir in minced garlic and grated ginger; sauté until fragrant (about 30 seconds). Add mixed vegetables and cook until slightly tender but still crisp.
  4. Combine cooked chow mein noodles with the chicken and vegetables in the skillet. Pour in soy sauce and sesame oil, stirring well to coat evenly.
  5. Garnish with sliced green onions before serving hot.
