  • 34 ripe bananas (mashed)
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash bananas until smooth.
  3. Mix in melted butter, sugar, egg, and vanilla until creamy.
  4. In another bowl, whisk flour, baking soda, salt, and cinnamon together.
  5. Fold dry mixture into wet ingredients until just combined; do not overmix.
  6. In a small bowl, mix together cinnamon and sugar for the swirl.
  7. Pour half the batter into the prepared loaf pan, sprinkle with half the cinnamon-sugar mixture, layer remaining batter and top with remaining cinnamon-sugar.
  8. Bake for 60-70 minutes or until a toothpick comes out clean.
