Ingredients

  • 2 cups fresh corn kernels (about 2 ears)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 ripe avocado, diced
  • 1/4 cup freshly squeezed lime juice (about 2 limes)
  • 1/4 cup fresh cilantro, chopped
  • 1/2 medium red onion, diced
  • Salt and pepper to taste

Instructions

  1. Boil water in a pot and cook the corn cobs for 5-7 minutes until tender. Cool slightly before cutting off kernels.
  2. In a large mixing bowl, combine black beans with the corn.
  3. Dice the avocado and red onion; chop the cilantro. Add these to the mixing bowl.
  4. Squeeze lime juice over the mixture to add flavor and prevent browning of the avocado.
  5. Gently fold all ingredients together until well combined.
  6. Taste-test your salsa; adjust seasoning if needed.
