- 4 cloves fresh garlic, minced
- 1 tbsp fresh ginger, grated
- 1 medium yellow onion, chopped
- 1 can (13.5 oz) full-fat coconut milk
- 1 cup plain tomato sauce
- ½ cup unsalted butter
- 2 tbsp curry powder
- Salt and pepper to taste
Instructions
- Trim excess fat from the chicken breasts and cut them into bite-sized pieces.
- If desired, sauté the chopped onions in a pan until golden brown for enhanced flavor.
- In the crockpot, layer the chicken pieces at the bottom. Pour in coconut milk and tomato sauce, followed by garlic, ginger, butter, curry powder, salt, and pepper.
