  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 medium yellow onion, chopped
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup plain tomato sauce
  • ½ cup unsalted butter
  • 2 tbsp curry powder
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from the chicken breasts and cut them into bite-sized pieces.
  2. If desired, sauté the chopped onions in a pan until golden brown for enhanced flavor.
  3. In the crockpot, layer the chicken pieces at the bottom. Pour in coconut milk and tomato sauce, followed by garlic, ginger, butter, curry powder, salt, and pepper.
  4. Stir gently to combine all ingredients.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  6. Stir before serving; garnish with fresh cilantro if desired.
