  • 4 boneless, skinless chicken breasts
  • 2 large yellow onions, sliced
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 8 oz cream cheese (full-fat)
  • 1 cup orzo pasta (cooked separately)
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Slice onions thinly and season chicken with salt and pepper. Place chicken at the bottom of the crockpot.
  2. Add minced garlic and sliced onions on top of the chicken.
  3. Pour low-sodium chicken broth over the ingredients.
  4. Cut cream cheese into chunks and scatter on top.
  5. Sprinkle dried thyme over everything; stir gently.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender enough to shred.
  7. About 15 minutes before serving, cook orzo per package instructions; drain and add to the crockpot.
  8. Serve warm, garnished with fresh parsley if desired.
