- 2 cups cooked shredded chicken
- 8 corn tortillas, torn into pieces
- 1 cup enchilada sauce (mild or spicy)
- 1 can (15 oz) black beans, rinsed and drained
- 2 cups shredded cheddar cheese
- ½ cup sour cream
- 2 green onions, chopped
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp chili powder
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a large baking dish with olive oil.
- In a bowl, mix the shredded chicken, black beans, enchilada sauce, cumin, chili powder, and half of the cheese until well combined.
- Layer half of the torn tortillas at the bottom of the prepared baking dish.
- Spoon half of the chicken mixture over the tortillas followed by another layer of tortillas and the remaining chicken mixture.
- Top with the rest of the cheese.
- Bake for 30-35 minutes until bubbling and golden brown on top.
- Allow to cool for a few minutes before serving.
