  • 1/2 cup dark molasses
  • 1 cup heavy cream
  • 1/2 cup semi-sweet chocolate (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 15×10 inch jelly roll pan with parchment paper.
  2. In a bowl, whisk together flour, baking powder, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, beat butter and sugar until fluffy. Add eggs one at a time followed by molasses.
  4. Gradually mix in the dry ingredients until just combined.
  5. Pour batter into the prepared pan and bake for 12-15 minutes or until a toothpick comes out clean.
  6. Cool slightly before rolling onto powdered sugar-dusted parchment paper.
  7. Whip heavy cream with sugar until soft peaks form; spread on cooled cake before rolling again.
  8. Prepare ganache by melting chocolate with cream; pour over the rolled cake.
