  • 2 (6 oz) fresh halibut fillets
  • 4 tbsp unsalted butter (cut into pieces)
  • 2 shallots (finely chopped)
  • 1/2 cup dry white wine
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp fresh thyme or parsley (chopped)
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping shallots and zesting the lemon.
  2. Heat olive oil in a skillet over medium-high heat. Season halibut with salt and pepper, then place skin-side down in the pan. Cook for about 4-5 minutes until golden brown.
  3. Remove halibut from the skillet and set aside. In the same skillet, add chopped shallots and sauté until translucent.
  4. Pour in white wine, scraping up any bits from the pan. Simmer until reduced by half.
  5. Lower the heat and whisk in butter one piece at a time until melted and creamy. Stir in lemon juice and herbs just before serving.
  6. Serve the halibut drizzled with buerre blanc sauce over rice or alongside seasonal vegetables.
