  • 4 boneless, skinless chicken breasts
  • 6 cups mixed greens (romaine, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 cup honey mustard dressing
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese (optional)
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or stovetop pan over medium heat. Season chicken breasts with salt, pepper, and olive oil. Cook for about 6-8 minutes per side until golden brown and cooked through.
  2. In a small bowl, whisk together honey mustard dressing ingredients: honey, mustard, olive oil, lemon juice, salt, and pepper.
  3. While the chicken cooks, chop the mixed greens into bite-sized pieces and slice cucumbers and tomatoes.
  4. Once cooked and cooled slightly, slice the chicken into strips. In a large bowl, combine mixed greens, tomatoes, cucumbers, red onion, and feta cheese if using.
  5. Drizzle the dressing over the salad mixture and toss gently to combine.
  6. Serve immediately or chill for 10-15 minutes to enhance flavors.
