- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/4 cup honey mustard dressing
- 1/2 red onion, thinly sliced
- 1/4 cup feta cheese (optional)
- 2 tbsp olive oil

Instructions
- Preheat your grill or stovetop pan over medium heat. Season chicken breasts with salt, pepper, and olive oil. Cook for about 6-8 minutes per side until golden brown and cooked through.
- In a small bowl, whisk together honey mustard dressing ingredients: honey, mustard, olive oil, lemon juice, salt, and pepper.
- While the chicken cooks, chop the mixed greens into bite-sized pieces and slice cucumbers and tomatoes.
- Once cooked and cooled slightly, slice the chicken into strips. In a large bowl, combine mixed greens, tomatoes, cucumbers, red onion, and feta cheese if using.
- Drizzle the dressing over the salad mixture and toss gently to combine.
- Serve immediately or chill for 10-15 minutes to enhance flavors.
