Ingredients

  • 2 slices sourdough bread
  • 1 ripe avocado
  • 1 cup fresh kale leaves, chopped
  • ¼ cup pine nuts, toasted
  • ¼ cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 2 garlic cloves
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, blend kale, toasted pine nuts, garlic, and Parmesan until finely chopped. Slowly drizzle in olive oil while blending until smooth.
  3. Mash the ripe avocado in a bowl and season with salt and pepper.
  4. Spread kale pesto on one side of each slice of bread. On one slice, layer the mashed avocado before closing with the other slice.
  5. Heat a skillet over medium heat and add olive oil or butter. Grill the sandwich until golden brown on both sides and cheese is melted.
