  • 2 cups zucchini noodles
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers (mixed colors), chopped
  • 1/4 cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp dried Italian herbs
  • Salt & pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Wash and prepare all vegetables: halve cherry tomatoes, dice cucumber, and chop bell peppers into bite-sized pieces. Spiralize zucchini into noodles.
  2. In a small bowl, whisk together olive oil, lemon juice, dried herbs, salt, and pepper until well combined.
  3. In a large mixing bowl, combine zucchini noodles and chopped veggies. Drizzle dressing over the mixture and toss until evenly coated.
  4. If using Parmesan cheese, sprinkle it over the salad and gently fold it in.
