  • 2 cups powdered sugar (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, cream the softened butter until smooth. Gradually add the sugar and beat until light and fluffy.
  4. Add eggs one at a time, mixing in lemon zest and juice until combined.
  5. Gradually mix dry ingredients into wet ingredients until just incorporated.
  6. Gently fold in blueberries.
  7. Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
