  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 8 oz fresh mushrooms, sliced
  • 1 tsp garlic powder
  • 1 can (14.5 oz) diced tomatoes, drained
  • 2 cups shredded cheddar cheese
  • 2 tbsp olive oil
  • 3 large eggs, whisked
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, heat olive oil and sauté the onion and green pepper until softened.
  3. Add ground beef to the skillet; cook until browned. Drain excess fat if necessary.
  4. Stir in sliced mushrooms and cook until tender, about 4-5 minutes.
  5. In a large bowl, combine the meat mixture with diced tomatoes, whisked eggs, garlic powder, Italian seasoning, salt, and pepper. Mix well.
  6. Transfer the mixture to a greased baking dish and sprinkle cheddar cheese on top.
  7. Bake for 25-30 minutes or until bubbly and golden brown.
  8. Allow it to cool slightly before serving.
