- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 8 oz fresh mushrooms, sliced
- 1 tsp garlic powder
- 1 can (14.5 oz) diced tomatoes, drained
- 2 cups shredded cheddar cheese
- 2 tbsp olive oil
- 3 large eggs, whisked
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, heat olive oil and sauté the onion and green pepper until softened.
- Add ground beef to the skillet; cook until browned. Drain excess fat if necessary.
- Stir in sliced mushrooms and cook until tender, about 4-5 minutes.
- In a large bowl, combine the meat mixture with diced tomatoes, whisked eggs, garlic powder, Italian seasoning, salt, and pepper. Mix well.
