  • 4 boneless, skinless chicken breasts (approximately 1.5 lbs)
  • 2 large sweet potatoes (about 1 lb)
  • 3 tbsp Dijon mustard
  • 1/4 cup pure maple syrup
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary, chopped
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Preheat oven to 400°F (200°C). Cube sweet potatoes, toss with olive oil, salt, and pepper, then spread on a baking sheet.
  2. Season chicken breasts with salt and pepper while sweet potatoes roast for about 25 minutes.
  3. In a bowl, whisk together Dijon mustard, maple syrup, lemon juice, and rosemary.
  4. Heat olive oil in a skillet over medium-high heat. Sear chicken for about 5 minutes per side until golden brown.
  5. Pour half of the sauce over the chicken and transfer both chicken and sweet potatoes to finish cooking in the oven for an additional 15 minutes until cooked through.
